High Protein Healthy Pumpkin Pie Dessert Recipe — Low Fat
Who doesn’t like pumpkin pie on Thanksgiving? This recipe is perfect because it’s incredibly low in fat without sacrificing any flavor!
Here’s what you’re going to need:
-2 cups of 100% pumpkin puree
-1/4 cup of stevia (or truvia)
-4 egg whites (equal to 1/2 cup of liquid egg whites)
-1 cup of skim milk (or low-fat)
-1/2 tbsp. of cinnamon or nutmeg
-1 scoop of vanilla protein powder (or vanilla extract)
Note: You may use a crust if you’d like, it tastes great without one and saves a ton of calories and bad carbs too. Also, you don’t NEED protein powder for this recipe. You can simply use vanilla extract and it will taste awesome, but of course it won’t have as much protein in it.
Mix all ingredients in a blender and blend until smooth. If you don’t use a crust, make sure to spray your baking dish with non-stick spray to keep it from burning.
Any pie baking dish should work fine, as long as all of the batter fits inside.
Bake at 350 degrees for 45 minutes. Make sure to check on it periodically!
After it’s done, put it in the fridge for 1-2 hours so it can cool and set.
Add some sugar free or fat free whipped cream on this and you’re good to go!
Another thing you could so is take some plain greek yogurt and mix it with stevia to get a healthy whipped cream substitute.
